Walnut Description and Characteristics
Walnut is a high deciduous tree, among the key characteristics of which is a well-developed rhizome and a massive, dense, branched crown. The size and shape of the fruit depends on the variety of culture: they can be small, medium and large, and also have a round, oblong or flattened shape. The peel of a ripe nut fruit has a brown tint. Its surface is defined by small pores, tubercles and indentations.

When to pick walnuts
The timing of the collection of unripe fruits depends on the purpose of their use and can vary significantly.
Walnuts, which will be used for the preparation of medicinal products, must be collected in late June – early July. The collection time depends on the climatic conditions of the environment. The green color of the peel of the fruit is not an indicator of their immaturity, because it can hide an already strong drupe underneath, and collecting for the purpose of creating medicines will no longer be suitable.Green harvesting is carried out exclusively in dry weather.
Check the green fruits for strength: if they are not ripe, then the kernel remains soft and white. Due to the content of a large amount of iodine in its green peel, it can stain your hands in a dark color, so before harvesting it is recommended to wear gloves beforehand to pick nuts.
For making jam
Nuts, which will be used not for tincture, but for making delicious jam, are collected in late May – early June. To determine the ripeness level, pierce the fetus with a toothpick (it should come in without problems). The diameter of the nut should not exceed 2–2.5 cm. Unripe fruits will not fall to the ground if the tree is peeled: they must be torn, so stock up on a stepladder.
Collect only healthy nuts for medicinal or culinary purposes. There should be no damage or wormholes on their surface.
How and how much to store green walnuts
Unripe fruits are not subject to storage, so they should be sold immediately in the first day after collection: prepare a delicious healing jam or medicinal tincture based on sugar or alcohol.
